avocado gatsby tartines with fries

All the best food in one, Gatsby sandwiches are sandwiches with fries inside them also called chip butties here in England, however, this is a healthy version. So firstly you have char griddled bread, then a delicious avocado salad, then you garnish it with crunchy healthy fries. As all my girlfriends say, my kind of food. It covers all bases, sweet and savoury, crunchy and smooth. It’s a healthy tasty snack, starter or light meal. May I suggest only one for a starter as they are quite filling. An open sandwich taken to another level.

Recipe

For two as a snack or light meal or four as a starter.

Ingredients:
Four slices of bread (I use sourdough)
2 ripe avocados
Half a tiny red onion finely chopped
1 lemon
Baby salad leaves
1 clove of garlic
A small sprig of parsley finely chopped
2 tablespoons of olive oil
Mustard, a pea-sized smidge
Half a teaspoon of maple syrup
Salt and pepper to taste
Matchstick fries 1 portion

How:
Toast the bread or use my recipe for scorched toast and then rub one side with the garlic clove and set aside.
Make the dressing by mixing the zest and the juice from half the lemon with the olive oil, maple syrup, mustard and season with the salt and pepper.
Cut the avocados in half and remove the stone and skin. Cut them into slices and gently mix them in a bowl with the dressing.
If you are making the fries, they should be made last minute so they are still crunchy and hot when they are placed on top.
Place the toast on plates and place a few salad leaves on, then place the avocados on top with a sprinkling of red onion and parsley.
Pour over the remaining dressing that the avocados were in and finally place the hot fries on top…et voila, a healthy and tasty chip tartine.
