These delicious beans were part of a sushi meal I had from a Japanese restaurant in Spitalfields. I have guessed what the sauce was, and I think I’ve nailed it.
200g approx of fine beans topped and tailed
1 heaped tablespoon of peanut butter
1 teaspoon of soya sauce
1 teaspoon of maple syrup
1/2 teaspoon of toasted sesame oil
1/4 garlic clove chopped
1/4 teaspoon of grated fresh ginger
Put the beans into a pan of boiling water and cook for 5 minutes. Drain and leave to cool. Meanwhile put the rest of the ingredients into a blender (I use a stick blender) and whizz with 3 tablespoons of water. It should be the consistency of single cream.
Put the beans on a serving plate and pour over the sauce.
