roasted pears with date molasses

This easy Middle Eastern inspired recipe is made with the delicious flavours of cinnamon, lemon, vanilla and the sauce it creates is dark and syrupy. It is delicious hot or cold with a dollop of ice cream, cream or yogurt. 



  • Six hard pears
  • 1/3 cup of dark brown sugar 
  • 2 small lemons 
  • 3/4 cup of water
  • 1 tsp of cinnamon 
  • 6 tbs of date molasses (I use the Belazu brand)
  • 1 or 2 vanilla pods
  • 1 big handful of pistachios, chopped and lightly toasted for later


Preheat the oven to 180c. Place the pears in a large oven proof roasting container. 

In a bowl mix the sugar, date molasses, cinnamon and water, then pour over the pears. Cut a few long strips of the skin of the lemon and pop them in with the pears and squeeze the lemons and add the juice. 

Split the vanilla pod(s) lengthwise and scrape the tar like seeds out with a knife and add to the other ingredients and stick the pods in with the pears as well.

Bake in the oven for about 45 minutes spooning the sauce over the pears halfway through, or until the pears are tender, and the sauce has gone a bit syrupy, test them with a skewer if in doubt. Serve the pears with the molasses syrup spooned over the top and sprinkle with the chopped pistachios
