asian-ish fried rice with coconut, lime and eggs

I knocked up this store cupboard recipe when I had a cold and wanted to make something that was packed with garlic, chili, ginger and vitamins that would help me get better. A friend eventually came over and tried it and started to make it for her family; she loved it so much she wanted me to share it on the blog. It’s super tasty comfort food. So, here’s the recipe.

Serves 2

Ingredients

4 eggs hard boiled and halved

1 onion finely chopped

1 tablespoon of coconut oil

1 cup of defrosted petit pois peas

1 clove of garlic crushed

1 tablespoon of grated Ginger

1 x 250g bag of precooked brown basmati rice

1 tablespoon of soy sauce

1 tablespoon of black onion seeds

4 -5 tablespoons of coconut cream

Half a Red chilli finely chopped

1 lime

How:

Heat a large frying pan and put in the coconut oil and gently fry the onion until it’s starting to brown. Add the garlic, ginger and chili and continue to stir fry for a few more minutes. Now add the rice straight from the bag and stir fry until the rice is heated through. Mix in the coconut cream, peas and soya sauce and place the eggs halves on top and gently cook for a couple more minutes and serve, sprinkled with the black onion seeds and wedges of lime.
