tuna ceviche with chilli mango and lime

This recipe by the chef Peter Gordon is quite simply one of the most delicious things I’ve ever eaten. It’s the perfect food to eat in the summer as it’s a Polynesian style sweet savoury raw fish salad that requires no cooking and is fresh and light. I sometimes add crispy onions on top that you can get in a tub from the salad dressing aisle in the supermarket which add a bit more crunch and flavour. It’s perfect as a date night dinner for two or as a starter for a dinner party.

Recipe:

Serves 2 or 4 as a starter.

Ingredients:

350g of very fresh Tuna (I use the pale Albacore tuna that I get in Sainsbury’s)

Marinade
1 1/2 tbsp of fresh lime juice
1/4 tsp of sea salt, I use Maldon flakes

Coconut dressing 
1 small red onion halved and very thinly sliced
1 1/2 tbsp of fresh lime juice
1/2 tsp of lime zest
1/2 red chilli very finely sliced
1/2 tsp of palm sugar (I use maple syrup)
100ml of coconut milk
1/2 mango, peeled and cut into thin slices or tiny cubes
8 coriander stalks, finely chopped with the leaves reserved for garnish
1 spring (scallion) onion sliced very thinly

To garnish
1 apple cut into matchsticks
2 tbsp of desiccated coconut, toasted
2 tbsp of crispy onions from the supermarket (optional)

How:

Begin by preparing the tuna. Cut the fish into small cubes about 1 1/2cm and place in a bowl or freezer container. Add the lime juice and salt, cover and place in the fridge for 30 minutes.

For the coconut dressing: briefly rinse the sliced red onion under cold water, then mix with the lime juice, lime zest, chilli and sugar/ maple syrup in a bowl. Cover and place in the fridge until the fish is ready.

Drain the juices from the fish and toss gently with the onion mixture, coconut milk, mango, coriander and spring onion. Cover and place in the fridge for 5 minutes.

Toss the apple with the toasted coconut. Give the fish another gentle mix and check for seasoning, adding more salt if needed. Divide among bowls or plates and sprinkle with the apple and coconut. Garnish with the coriander leaves. Serve straight away adding the crispy onions if you fancy.
