Everyone goes nuts over this stuff, take it to a dinner party and people dive on it even after they have eaten. Dipped in chocolate and decorated is even better and makes great gifts in clear food bags with a ribbon.
200g of caster sugar
8 tablespoons of golden syrup
3 teaspoons of bicarbonate of soda
Prepare a large sheet of greased foil on a flat surface.
Put the sugar and syrup in a biggish saucepan on the stove and bring to the boil, it will melt.
Cook till it goes amber coloured, about 3 minutes.
Take off the heat and whisk in the bicarbonate of soda until it puffs up into a golden cloud. It is very very hot.
Carefully tip it onto the prepared foil.
Leave to set, then break into shards by snapping it with your fingers. Don’t make on a damp day as it will just go sticky.
