burrata salad with peas

I don’t eat a lot of cheese but when I do it is usually pecorino, Parmesan or on spesh occasions, burrata. Once you try burrata you wonder why you have never ever had it before because its one of the most delicious things in the world on every level. It’s a soft pillow of creamy, delicately flavoured gorgeousness, a mozzarella which has stepped up its game and become the beautiful twin. It has double cream in the centre of it, so when you break it open with your fingers the middle flows out of it like the sauce escaping from a hot chocolate fondant pudding. Peas are great too, so I married them off to each other and added a simple dressing with lemon. This salad should take minutes to make and makes a great starter or snack…or as a side dish with my midnight spaghetti.

Recipe

Serves 2 or one as a main course.

Ingredients: 

1 lemon juiced
1 or 2 burrata or mozzarella balls
A sprig of mint very finely chopped
A cup of thawed frozen peas (no need to cook)
Crunchy salad leaves (I use red chicory or treviso radicchio)
Salt and pepper to taste
½- 1 teaspoon of maple syrup
2 tablespoons olive oil

mince pie apple crumble

A really delicious way to use up the Christmas mince pie mountain over the festive period, even the stale ones. This is my own invention and it elevates the mince pie to a whole new level, turning it from a Skoda into a Ferrari. The tartness of the apple counterbalances the sweetness of the mince pies, which caramelise on top of the apples and it really works as they are a marriage made in heaven. It has all the Christmassy flavours of orange zest and mixed spice then the mix of crunchy top with the creamy apples combo, which for me is pretty perfect. My friends think this recipe is a work of genius.

Recipe

Serves 4-6.

Ingredients:
700g cooking apples, peeled, cored and chopped
25g soft brown sugar
Zest of an orange and two tablespoons of its juice
2 teaspoons mixed spice (or cinnamon if you can’t get mixed spice)
(sometimes I double up the filling because I love a lot of apple, this will mean another 15 minutes approx of baking time)

Crumble topping
Several mince pies or more if you are a big mince pie fan
75g butter
175g plain flour (I use wholemeal spelt)
50g soft brown sugar

mujaddara


This is my super easy version of mujaddara which is a delicious spicy dish of lentils, rice and caramelised onions with parsley which dates all the way back to a recipe book written in 1226 from Iraq. It is served in restaurants from Egypt to Isreal and is delicious served with a salad, chopped cucumbers and with plain yogurt or labneh. It is served at room temperature so it’s perfect for preparing in advance for a dinner or picnic. You can serve it with a green salad and or with meat or fish. It’s a staple round mine.

Recipe

Serves 4-6 depending on what you serve it with.

Ingredients:
2 x 250g bags of cooked brown basmati rice (supermarket)
1 x 400g tin or carton of green or brown lentils(I use Puy lentils too)
1 tablespoon of ground cumin
1 teaspoon of cinnamon
1 tablespoon ground coriander
¼ -½ teaspoon of chilli powder
2 minced garlic cloves
2-3 finely sliced large red onions
4 tablespoons of olive oil
2 lemons zested and cut into wedges for squeezing
big bunch of roughly chopped parsley
Salt to taste

gado gado snacks

Don’t you love a snack? I love them and I’d be happy to live on them for the rest of my life. These are a lower carb version of a Gado Gado salad, but in a small snack form. So if you are on a lower carb regime they are perfect. Great as a canapé or starter, or just in front of Netflix with your favourite box set. They are crunchy, creamy and sweet and sour, which is, if you read this blog, my favourite  combo… blinking delish.

Serves 3-4.

Ingredients:
12 Quails eggs (£2.60 doz from Sainsbury’s)  or 4 normal size eggs
1 red pepper very finely chopped
1 head of chicory or a lettuce
1 small cucumber, julienned(I use a julienne peeler)
A handful of crispy onions (supermarket)
A small sprig of fresh coriander

The sauce:
1 clove of chopped garlic
3 tablespoons of maple syrup
5 tablespoons of peanut butter
Juice of 2 limes
1 teaspoon fish sauce
1 tablespoon of soya sauce
1 tablespoon of tamarind paste
Chilli sauce to taste (optional)

pink pickled onions

These pink pickled onions really are this colour when you make them. They are so pretty and will look beautiful adorning anything with their pinkness. I first had these in a Mexican restaurant with refried beans on corn tortillas and they were delicious in a sort of burger relish kind of way. They are crunchy, tangy and delicious, perfect as a kind of low calorie relish. They are amazing on salads, on a chilli,  in a burrito, with any fish or meat or even in a toasted cheese sarnie. They are the easiest thing to make and great to have in the fridge. Continue reading

pea mint and feta salad

I’m a pea-a-holic and nothing thrills me more than peas in a recipe, so I made this salad as a homage to the pea, which incidentally,  is one of the highest fibre vegetables.
I eat this on home made bruschetta but if you do eat meat, it’s excellent with Lamb chops or roast chicken.

Serves 4 as a side dish.

Ingredients:
1 cup of frozen petit pois, thawed overnight in fridge (by the way, they don’t need cooking)
1 small bunch of fresh mint finely chopped
1 shredded cos lettuce
Juice and zest of a lemon
2 teaspoons maple syrup
50 ml of olive oil
1 clove of crushed garlic
½ block of crumbled feta cheese

chocolate and pear ice cream

My challenge was to make an easy chocolate ice cream that was a proper hit of chocolate, rich and creamy and really healthy. You don’t need an ice cream maker and the ingredients are simple. The pears make the flavour and texture work really well. My friends really like it… and it’s delicious with strawberries or raspberries. Perfect if you want a chocolate fix and still want to fit into your bikini (or speedos). A lovely follower of mine on Instagram called Sue added a smashed up bar of good quality dark chocolate at the end and said it made it deluxe.

Makes 1/2 litre.

Ingredients:
1 big pinch of salt
1 teaspoon vanilla extract
4 ripe pears
3 tablespoons maple syrup
½ cup soya milk (I use Bonsoy) or coconut milk/cream
¾ cup unsweetened cocoa powder

quick watermelon sorbet

This sorbet tastes like the best watermelon you have ever tasted. It is really easy to make and doesn’t need an ice cream maker. My friends love it and if you love watermelon, you will too. I have taken David Lebovitz’s water melon sorbet recipe and tweaked it so it was quicker and easier to make, so you can spend more time on your sun lounger.

Makes half a litre.

Ingredients:
3 cups approx. of fresh watermelon cut into pieces without the skin or black pips (white pips are okay)
½ cup of maple syrup or sugar
Big pinch of salt
1 tablespoon freshly squeezed lime juice
1-2 tablespoons vodka (or gin)
About 4 tablespoons of grape juice(might not be needed)

tomato bruschetta with garlic paste

This bruschetta is Italian meets Lebanese (like us). A traditional tomato bruschetta perked up with a Lebanese garlic paste called Toum. This is a fantastic starter or snack for garlic fans.

Serves 4.

Ingredients:
4 thick slices of sourdough bread
2 heirloom tomatoes, thinly sliced
5 garlic cloves, peeled
1/4 cup of light olive oil
1 teaspoon of salt
Pepper to taste
Micro leeks or cress for decoration (optional)
