guacamole

Guac is the perfect tasty health food and this recipe is bursting with vitamins. Everyone  has their version of it and this is my version , it is silky smooth, except for the chopped red onion and tomatoes on top. It’s got all the authentic Mexican flavours of lime, chilli, oregano and cumin and it has a bit of a kick. You can put in half the chilli if you prefer it milder. I have eaten this ever since I went on the Fit for Life diet years ago. I’d have it on toasted rye bread with butter, but now I’d just make it with bread brushed with olive oil, roasted and sprinkled with a pinch of salt. It’s a lovely combo of crunchy, creamy and spicy and it’s super delicious. Perfect for lunch as it takes minutes to make.

mashed peas on toast with parmesan

I love peas and always have, and will always be excited if I know they are on the menu, and I try and find any excuse to put them in a recipe. I have wanted to make mashed peas on toast for ages, and now I have knocked one up for the blog. It’s a delicious mix of crunchy bread with the delicate pea mash and the flavours of the Parmesan and balsamic vinegar. Bloody delish and great as a canapé or starter or as a snack.

asian cucumber and peanut salad

This salad is lower carb, and for me it has the right combination of textures and flavours, because it tastes fresh and delicious. It has the creaminess of the coconutty and peanutty sauce mixed with the crunchiness of the cucumber and the sweet and sour flavours from the limes, maple syrup, Sriracha and coconut cream dressing. This is a vegan recipe at its penultimate best and is fab served with fish like my (Asian sea bass) but you can serve it with chicken or steak and if you aren’t low carbing it, serve with Thai sticky rice. Yum.

Recipe

Serves 4.

Ingredients:
1 large cucumber
A sprig of fresh coriander finely chopped
A handful of chopped roasted peanuts
2 salad onions finely sliced
1/2 teaspoon sesame seeds (I use black sesame seeds)

The dressing
3 tablespoons of smooth peanut butter
1/2 clove of garlic
1 tablespoon of coconut cream
1 lime juiced
2 tablespoons of water
1/2 teaspoon of Sriracha (chilli sauce)
1 tablespoon of soya sauce
1 tablespoon of maple syrup

midnight spaghetti

You can never have enough pasta in your life. When I was very young my father used to take me to a smart Italian restaurant in Chelsea called The Meridiana owned by his friend Enzo Apicella.  Enzo sometimes sat with us while we ate and we would discuss our love of pasta. This is a simple recipe, which is incredibly delicious. It’s also called Aglio E Olio in Italian. There are a lot of versions of it, and you can customise it with whatever you have in the cupboard. It’s called midnight spaghetti because it’s a recipe used by tired, busy chefs after they come home late after long day at work. It’s also called ‘after the party’, so you get the drift…it’s quick, easy and very tasty, particularly after one too many drinks and you are ravenous. It would also be a perfect for a vegetarian dinner party with a salad if you wanted to cook something that is economical and very doable.

midnight spaghetti 2

This is my second midnight spaghetti (sometimes called spaghetti di mezzanotte) only I use linguine, but you can use spaghetti if you prefer. I got this version from The New York Times and because of its simplicity and because it’s not only a great store-cupboard standby, it’s also perfect when you can’t be bothered to cook yet another massive meal at Christmas or any time and fancy something easy, delicious and quick. It’s the chefs choice because they arrive home tired and want something easy to cook after a day of cooking, and the reason it’s really tasty is because it’s flavour bombed with a combo of anchovies, garlic, chilli and capers. I love it with Parmesan or without. It’s also perfect served with a crunchy green salad with my vinaigrette or as a midnight feast in a candle lit kitchen à deux after a party.
Recipe 
Serves 2 (you can double or triple the quantities).
Ingredients:
250g of linguine or spaghetti
3-4 tablespoons of olive oil
4 anchovy fillets chopped
3 garlic cloves peeled and very thinly sliced
1 tablespoon of small capers chopped
¼-1/2 teaspoon of chilli flakes
A small bunch of parsley, finely chopped
Grated Parmesan (optional)

creamy fish curry

I love this delicious Madur Jaffrey dairy free creamy fish curry recipe and have been cooking it for ever. It’s perfect for Friday night dinner, a dinner party or as an antidote to all the Christmas fare at Christmas. It’s great served with a wedge of lime and fantastic to serve on Christmas eve to guests as a simple supper with basmati rice or with whatever you fancy.

Recipe

Serves 4.

Ingredients:
A thumb size piece of ginger
3 green chillies
7 cloves of peeled garlic
400ml can of coconut milk
250ml carton of coconut cream
4 tablespoons of coconut oil or olive
3 medium onions finely chopped
8 small tomatoes halved
800g of white skinless fish (haddock, cod, monkfish), cut into big chunks
¾ teaspoon of turmeric
¼ teaspoon of cayenne pepper
A handful of coconut chips, toasted in a dry pan (optional)
A bunch of finely chopped coriander (optional)
Salt to taste

mujaddara


This is my super easy version of mujaddara which is a delicious spicy dish of lentils, rice and caramelised onions with parsley which dates all the way back to a recipe book written in 1226 from Iraq. It is served in restaurants from Egypt to Isreal and is delicious served with a salad, chopped cucumbers and with plain yogurt or labneh. It is served at room temperature so it’s perfect for preparing in advance for a dinner or picnic. You can serve it with a green salad and or with meat or fish. It’s a staple round mine.

Recipe

Serves 4-6 depending on what you serve it with.

Ingredients:
2 x 250g bags of cooked brown basmati rice (supermarket)
1 x 400g tin or carton of green or brown lentils(I use Puy lentils too)
1 tablespoon of ground cumin
1 teaspoon of cinnamon
1 tablespoon ground coriander
¼ -½ teaspoon of chilli powder
2 minced garlic cloves
2-3 finely sliced large red onions
4 tablespoons of olive oil
2 lemons zested and cut into wedges for squeezing
big bunch of roughly chopped parsley
Salt to taste

crab linguine

This is my 100th recipe on the blog. I’m really proud and grateful, thank you for subscribing, and as Julia Child used to say Bon Appétit!

I have had the crab linguine lots of times at Polpo restaurant in Nottinghill Gate with my friend Emily, we always order it and we are obsessed with it as it’s so good. I really wanted the recipe, however it isn’t in their cookbooks or online, so I have had to guess what it is. It took me six attempts before I got it right, that’s a lot of linguine and I’m now booking in to a health farm so I can do my jeans up again, however it was worth it. I really think Polpo have nailed it, and I hope you think I have too. The beauty of it is it only takes about twelve minutes to make and you can keep the ingredients in the store cupboard. Perfect for a stress free dinner party or just dinner for two. Ralph has just cooked and tasted it and he thinks that it is so easy and beyond amazing and you should definitely try it and everyone that has cooked this recipe has said it’s the best crab linguine they have ever had. Give it a try…

Recipe

Serves 2 (double or triple the quantities for more people).

Ingredients:
200g of linguine or spaghetti
170g tin of crab meat (drained which becomes 100g) or 100g of fresh white and/or brown crab meat
½ teaspoon of finely chopped red chilli or a pinch of dried chilli flakes
8 cherry tomatoes halved
A sprig of parsley finely chopped
2 tablespoons of fresh grated Parmesan
1 small clove of garlic minced
2-3 tablespoons of butter
Juice of half a lemon
Salt and pepper to taste

This really delicious Lebanese salad is made with toasted pitas and a mix of salad vegetables and herbs and has the most delicious fragrant sweet dressing. It’s the perfect combination of sweet and sour and crunchy and soft combined. You can add radishes, carrots, olives, peppers, shredded red cabbage, feta or what ever you fancy, it’s perfect for using up vegetables in the fridge. It’s a sort of Middle Eastern version of panzanella and its really gorgeous. You can serve it as a starter, or with meat or fish and it’s perfect picnic food and pretty healthy too. I like it as a healthy lunch made with wholemeal pitas and a side order of humus and more pita bread. Over to Ralph…

Serves 2-3

Recipe

Ingredients:
Dressing:
2 teaspoons of sumac, soaked in 2 teaspoons of warm water for 10 minutes
2 tablespoons of lemon juice
1 tablespoon of pomegranate molasses
1 clove of minced garlic
1 teaspoon of wine vinegar
1/3 cup of olive oil
Salt and pepper to taste

Salad:
A couple of pita breads, lightly coated in olive oil and roasted in the oven till crispy then broken into smallish pieces
A handful of cherry tomatoes, halved
Half a cucumber, skinned and diced
Half a red onion finely sliced
1 little Gem or baby romaine lettuce, shredded
A sprig of finely chopped parsley
A sprig of finely chopped mint
