chewy ginger cookies

Crunchy, chewy and spicy…these cookies tick all the boxes. I found a recipe in the Waitrose supermarket, converted it to vegan and reworked them with healthier coconut oil and spelt flour. They are really easy to make and would be fantastic dipped or drizzled in melted dark chocolate. They are also perfect for making an ice cream sandwich with, with dairy free ice cream stuffed between two cookies. My favourite dairy free ice cream is Swedish Glace,I’m testing them out on my friend Emily tonight and I’ll get back to you.
They passed the very ‘moorish’ test….hurrah!

sweet and sour okra

This okra recipe is taken from my first ever Madhur Jaffrey cookbook my then boyfriend was given by someone he worked with because he loved curries and he loved cooking. We often used to argue about who cooked the dinner because we both loved to cook so much. Which led me to realise that theres’s room for only one domestic goddess in a relationship. The book has inspired me ever since then although I change the recipes to contain much less oil, and I use coconut oil instead of ghee. It is one of the most delicious ways to eat okra because it’s full of flavours which are sweet and fragrant and it has the gentle perfume of cumin and coriander. I also replace the sugar in her recipes with maple syrup, but you can use sugar if you prefer. I often serve it with other Indian dishes like dhal or just with plain basmati rice and an Indian pickle. One of reasons Indian food lends itself to vegetarian and vegan cooking so well is because it’s very, very tasty and has great textures and colours. I usually cook Indian food if I’m having my friends over for a vegetarian feast as I know everyone loves it.

mince pie apple crumble

A really delicious way to use up the Christmas mince pie mountain over the festive period, even the stale ones. This is my own invention and it elevates the mince pie to a whole new level, turning it from a Skoda into a Ferrari. The tartness of the apple counterbalances the sweetness of the mince pies, which caramelise on top of the apples and it really works as they are a marriage made in heaven. It has all the Christmassy flavours of orange zest and mixed spice then the mix of crunchy top with the creamy apples combo, which for me is pretty perfect. My friends think this recipe is a work of genius.

Recipe

Serves 4-6.

Ingredients:
700g cooking apples, peeled, cored and chopped
25g soft brown sugar
Zest of an orange and two tablespoons of its juice
2 teaspoons mixed spice (or cinnamon if you can’t get mixed spice)
(sometimes I double up the filling because I love a lot of apple, this will mean another 15 minutes approx of baking time)

Crumble topping
Several mince pies or more if you are a big mince pie fan
75g butter
175g plain flour (I use wholemeal spelt)
50g soft brown sugar
