lentil and feta salad

This salad is just an assembly job and only takes a few minutes to make. It originally comes from a low carb cook book I covet called Easy Low Carb and the recipes are complied by different authors. I think it’s out of print now, but it’s full of recipes to inspire anyone who wants to cook low carb or low G.I. but wants to keep it interesting and delicious. I have tweaked this recipe a bit to suit my tastes. I replaced the vinegar with lemon juice and added a tad of sweetness and lemon zest because lemon zest from organic unwaxed lemons is a really healthy addition to your food as well as super tasty. This salad is perfect with fish or meat or with other salads or just as a snack.

flourless orange and almond cake

One of the first times I had this cake was in the restaurant Polpo in Beak Street, London. I was then given their cookbook as a Christmas present a few years ago and it’s one of the easiest cakes to make at home, after you have boiled the oranges the rest of it is done in a blender, so there’s no faffing about with creaming in or sifting. It’s gluten and dairy free, not that you’d notice, plus it’s so delicious I was proposed to by a friend’s husband when he ate a slice. It’s delicious with a dollop of mascarpone and a coffee, as it says in the book. My friends now cook this a lot.

Serves 12.

Ingredients:
2 oranges
100g golden brown sugar
400g caster sugar
6 medium eggs or 5 large
250g ground almonds
1 ½ teaspoon baking powder
Zest and juice of an orange
A little bit of icing sugar for dusting

gnocchi

Little pillows of gorgeousness, my dad taught us to make these on the kitchen table and these are much nicer than shop bought gnocchi. This recipe is particularly good because you make it with scooped out baked potatoes, so it concentrates the potato flavour. I put them with my sugo recipe with lots of Parmesan and basil and you have a brilliant vegetarian dinner with a salad.

Makes enough for a starter for 6 or a main for 4 people.

350g of plain flour (or potato flour which is gluten free)
1kg of large floury potatoes (i.e. Desiree or Maris Piper)
1/2 teaspoon salt
Pinch of nutmeg (optional)
2 small beaten eggs
