roasted pears with Vermouth

I have been making this recipe for ever because not only is it the easiest pudding to make but it is one of the most delicious. Every one loves it and it’s got the lovely flavours of vanilla, the spicy vermouth and lemon peel. I initially got the recipe from an old Italian cookbook which had only a few ingredients in each recipe and no measurements. Every single recipe I did from that book was genius in its simplicity in the way Italians effortlessly get it right plus they all tasted amazing. This recipe requires virtually no work at all, you just bung the pears in a roasting dish with the rest of the ingredients, so it’s perfect for an easy dessert after dinner or when you want to create a simple pudding at the end of a dinner party. It can be served hot or cold and I serve it with dollops of Greek yogurt or sour cream. If you are vegan or dairy free you can serve it with {Swedish Glace } icecream or soya yogurt.

fresh nectarine salad

This salad is simple and sweetly delicious and I don’t know why I didn’t think of it before. I really love salads that are using just one main ingredient. It’s the zen way. Also I have always secretly put vinaigrette on my fruit salad when it’s just for me. So this recipe, which could also use peaches, hits the sweet and savoury thing on the head, if you like that sort of thing. I love the sweetness of the nectarine with the zingy dressing. It’s particularly lovely with my winter slaw. A friend of mine makes it all the time…she’s completely hooked on it.

creamy pineapple pachadi

This is the ultimate Indian sweet and sour dish and I like the idea of fruit being used as if they were vegetables. This quick and easy recipe would be fab served with other Indian dishes, like tandoori chicken or any meat dish or just with basmati rice and a salad. I converted it to vegan, by replacing the curd in the traditional recipe with creamy coconut milk and I think it tastes just as good. About to get my friends Louise and Nicola to test try it for dinner tonight and will get back to you with their verdict.
They loved it and couldn’t get enough of it. I served it with plain boiled basmati rice, poppadums, garlicky raita, homemade onion bhajis (recipe coming soon) and salad.
