Georgia O’Keeffe’s chocolate brownies

These really are the best brownies I have ever tasted because they are not too sweet and are really chocolatey and nutty. My friends all ask me to bake them for them after they saw the shots on Instagram and started dribbling at the sight of them, and they really are dribble-worthy. The story about these amazing chocolate brownies is as follows. This recipe was found amongst the painter Georgia O’Keeffe’s collection of recipes in her cookbooks. She was a passionate cook and this recipe was hand written by her on Waldorf Astoria note paper. She was was staying there on April 30th 1963 to collect an award for the creative arts from Brandeis University, so they think she must have asked the hotel for the recipe because she loved them so much. O’Keeffe was a passionate foodie and collected recipes wherever she went, and a bit like me she dipped into healthy food and dipped into more indulgent food depending on her whim. chewy pavlova meringue

This nude pavlova is perfect at Easter and can be made in advance and frozen unfilled. It’s also great served at a dinner party or instead of a birthday cake. It’s gluten and dairy free. That said, a good meringue is crunchy on the outside and chewy in the middle, and made with great ingredients. I got this recipe from the BBC good food website and its easy and delicious and works perfectly. You can layer whatever fillings you want on top and I can guarantee it will be popular when you serve it. It looks and tastes magnificent. Just don’t fill it too far ahead of time as it might get soggy.

vegetarian laksa bowl

This laksa is my version of the delicious  coconutty creamy sweet and sour Thai broth. Although more of a meal. It’s got soft boiled eggs and roasted tomatoes with spinach and leeks. It works because they are all flavours that work well together. It’s perfect for a midweek supper or on a date night. Once you have made the laksa paste you can keep it for a long time in the  freezer for future use. The laksa jars in the supermarket aren’t as good and fresh tasting, but they are fine if you can’t be bothered to make it.

truffle fries with fried eggs

Sometimes it’s the simplest things that are the best things and like most people I have loved egg and chips ever since my foodie sister took me to a greasy spoon when we were teenagers. At home we were used to eating European food and this was the best kind of British food and a revelation on every level, and something my mum would never have cooked us, so it felt rather exotic. It’s still up there in my memory as one of the best meals I ever had in a restaurant. However, I thought I’d ramp up the flavours a notch and create a newer version using olive oil, truffle oil, parsley and Burford eggs. You can use coconut oil, and there is a taste free version now in health food stores. I’m just eating this now having photographed it for this post, and all I’m thinking is it’s so delicious I can’t wait for Ralph to try it, and it is a perfect date night dinner.

pink date night pasta

What to serve at Valentine’s dinner for your darling that is homemade and original… Pale pink pasta, made with beetroot juice for the colour and with fresh eggs for the taste. pandoro or panettone bread and butter pudding

Get your elasticated waist bands ready…this is a really indulgent dessert….but worth it because it’s truly delicious but definitely on the naughty list. Pandoro or panettone Italian cakes are perfect for a good old fashioned bread and butter pudding, as they are rather bread-like and lend themselves totally to this recipe, Pandoro particularly as its baked in a star shaped tin, so it looks very Christmassy when it’s sliced into star shapes. It’s also a delicious way to use them up if there’s loads in your larder at Christmas or afterwards or when you fancy doing something a bit different with them and want to turn them into an even more scrumptious dessert. It’s Italy meets England in the best possible way…and great for making with kids. You can get them to saw up the Pandoro into star shapes for you.
Recipe
Serves 3-4.
Ingredients:
250g of Pandoro or Panettone (I use the baby size ones)
30g approx of butter at room temperature
2 eggs
140ml of double cream
220ml milk
2 teaspoons of vanilla extract
2 tablespoons of white caster sugar

heavenly nut loaf

I know a nut loaf sounds retro, but this nut loaf is a bit more sophisticated than the nut loaves of old, it’s really scrumptious and hasn’t got a single lentil in it. It’s packed with the amazing flavours of porcini mushrooms, parmesan and cashew nuts and it’s got a great texture which comes from the shiitake mushrooms. It’s perfect for vegetarians and vegans at Thanksgiving and Christmas or any time there is a roast (It’s even delicious sliced cold from the fridge and put in a sandwich, with cranberry sauce and mayo)

Jo Fairly the founder of Green and Blacks chocolate, wrote to me to say she has made a vegan version of my recipe by replacing the eggs with 250ml of Bonsoy soya milk, instead of the eggs and the 150ml of milk, btw it’s not ordinary plant based milk as it won’t work as well, and she swapped the parmesan for vegan parmesan which is now available in supermarkets or health food stores. She and her husband love this recipe and fry up the leftovers the next day and say it’s just as delicious.

Serve it with my vegetarian gravy , which is also vegan, my cranberry sauce and the rest of the trimmings.

Recipe

Serves 6-8.

Ingredients:
150g of dryish white bread crumbs
150ml of milk (or dairy free milk)
2 large eggs
30g of butter or olive oil plus a bit more for greasing the loaf tin
20g of dried porcini mushrooms (I get the cheaper porcini pieces in the supermarket) steeped in boiling water for 15 mins, drained and chopped
100g mushrooms chopped into small pieces (I use shiitake)
1 teaspoon of English mustard
1 teaspoon of grated nutmeg
2-3 teaspoons of Tabasco
1 egg white
1 tablespoon finely chopped fresh parsley
1 tablespoon of finely chopped fresh thyme
1 medium onion very finely chopped
2 medium celery sticks very finely chopped
Zest of one lemon
200g of chopped raw cashew nuts
100g chopped raw walnuts
1 large carrot finely grated
75g of Parmesan or vegan parmesan
A handful of polenta
Salt and pepper
1 large loaf tin, mine is approx for a one and a half pound loaf

slow roasted tomato with runny eggs brunch

This recipe is my favourite brunch. I love the combo of crunchy and creamy and sweet and savoury. But more interestingly,  rosemary is, according to the centenarians in the Italian town of Acciaroli, the secret to a long life. They should know, they have 300 of them out of a population of 2000.

For 2.

Ingredients:
250g of baby plum tomatoes
3 tablespoons of olive oil
1 tablespoon of sherry vinegar
2 teaspoons maple syrup
A small sprig of Rosemary
A small sprig of parsley very finely chopped
3 eggs
2 slices of sourdough bread
Salt and pepper to taste

caesar salad

Italian immigrant Caesar Cardini invented the Caesar in 1924 in Mexico during the prohibition, when supplies were depleted and he had to make a dish with limited ingredients for the customers in his restaurant.
This salad is not only on my blog because it is a great classic recipe but because I made it for a certain special person who loved it and I know will be pleased I mentioned him….HB.

Serves 2 but you can double or triple the amounts depending on how many you are feeding.

Ingredients:

1/2 clove of garlic
3 eggs or 12 quails eggs
A loaf of sour dough bread
1 tablespoon of olive oil
2 tablespoons of good quality Mayo
3 tablespoons of Greek yogurt (or Alpro Greek yogurt or Oatly creme fraische)
3 anchovies fillets tinned in oil and drained (or a tablespoon of vegetarian fish sauce)
2 tablespoons of grated Parmesan (there are plant based versions) plus more for grating on top of salad
1 teaspoon of lemon juice
Salt and Pepper to taste

asparagus mimosa

So called because the crumbled egg yolk on top looks like mimosa flowers. This classic French asparagus salad has been made since the twelfth century and was often knocked up for King George VI. It is really low carb unless you serve it on bruschetta, which is a combo I love because it’s the crunchiness with the softness of the asparagus and the egg that goes so well. This is great as a light meal or as a starter. And it’s asparagus season now, hurrah!

Serves 2.

Ingredients:
2 bunches of asparagus
Zest of one lemon
2 hard boiled eggs grated or finely chopped
A small sprig of parsley finely chopped
½ a small red onion very finely chopped
1 tablespoon finely chopped capers

Dressing
1 tablespoon of balsamic vinegar
3 tablespoons of olive oil
Salt and pepper to taste
½ teaspoon of Dijon mustard
1 teaspoon maple syrup
