chocolate avocado ganache

This chocolate ganache is super healthy and tastes like a very rich chocolatey ganache made with dairy, this is because the avocados give it a thick and rich creamy consistency. It’s so rich you only need a small amount. You can frost vegan cupcakes and cakes with it and it’s super healthy. It’s also great served as a pudding with coconut cream, desiccated coconut, berries, or bananas. You can even serve it with frozen berries which look amazing next to the dark chocolate ganache and it looks great served in little espresso cups or small shot glasses.

Recipe

Serves 4.

Ingredients:
2 tsp vanilla
2 teaspoons of maple syrup or to taste (optional)
2 ripe avocados
8 dates (pitted) the softer ones work best
Pinch salt
¼ cup of unsweetened cocoa powder

How:
Put the dates, maple syrup, vanilla and salt into the smallish bowl of a food processor. Whizz up till you have a paste. At this stage it can be a bit lumpy. Split the avocados in half with a knife, and take out the stone. Scrape it’s flesh into the food processor bowl with the date mixture and whizz again until as smooth as you can get it. This can take a few minutes depending on how soft your dates are. When smooth add the cocoa powder and whizz until mixed. Serve straight away or store in the fridge for a day in an air tight container. If it separates slightly, give it a quick stir.
Lastly…chocolate is now being put on the super food list as it’s so high in antioxidants and avos are the trending superfood as they are full of vitamins, fibre, minerals, monounsaturated fats and can help with feeling satiated. All good for eye health, digestion, heart health and blood pressure.
